Yield: 12 servings
|¾ cup||Cracked wheat|
|3 teaspoons||Baking powder|
|1||Egg, slightly beaten|
|¼ cup||Shortening, melted|
Preheat oven to 400F. Grease 12 muffin cups. Mix cracked wheat and milk together and set aside for 10 minutes.
Sift together dry ingredients. Stir egg and shortening into cracked wheat mixture. Add liquid to dry ingredients and stir only until combined. Batter will be lumpy. Fill prepared muffin cups ⅔ full.
Bake 20 to 25 min at 400F.
