Correro's red beans & rice

Measure Ingredient
1 pounds Dried red beans -- soaked
\N \N Overnight
1 \N Meaty ham bone
2 larges Onions -- chopped
1 \N Bell pepper -- chopped
2 \N Ribs celery -- chopped
¼ cup Parsley -- chopped
2 \N Cloves garlic -- finely
\N \N Chopped
\N \N Salt and pepper -- to taste
\N pinch Sugar
\N \N Bay leaf
2 pounds Sausage links -- your
\N \N Choice

Combine all except parsley and cook until beans are done. Serve over rice. Add parsley just before serving. Variation: Omit ham bone and sausage and use a center slice of ham, cut in small pieces.
