Yield: 1 Servings
|1 medium||Onion; chopped|
|2 cups||Cooked tomatoes|
|2 cups||Cooked lima beans|
|2 cups||Cooked corn|
|2 cups||Chicken or turkey; chopped|
|Salt and pepper to taste|
Cook onion in fat in large pan until tender. Combine all vegetables and bring to simmer. Drain vegetables, saving liquid (add water to make 2 cups). Combine vegetables with onions, add meats, season to taste, and bring just to boil.
This makes a thinner (and in my opinon, less flavorful) stew but it's a fairly good place to start.
