|1 cup||Flour (I use all white but the original recipe called for 1/2 white and 1/2 whole wheat)|
|2 teaspoons||Baking powder|
|½ teaspoon||Baking soda|
|2 cups||100% bran (I use All Bran cereal)|
|1¼ cup||Non-fat milk|
|⅓ cup||Firmly packed brown sugar|
|1||Egg equivalent (I use Egg Beaters)|
|½ cup||Dried cranberries or raisins|

Here is a Bran Muffin recipe I originally got from this list about 2 years ago. It is the best muffin recipe I've tried without added fat! Heat oven to 400 degrees. Mix cereal, milk and sugar in bowl; let stand 5 minutes. Stir in egg equivalent and applesauce. Add dry ingredients.
Spray muffin pan with no-stick spray and fill ⅔ full. Bake in oven 18-20 minutes. Makes 12 muffins.
