|2 teaspoons||Vegetable oil|
|4 teaspoons||Curry powder|
|4 teaspoons||Minced fresh ginger|
|1 tablespoon||Minced garlic|
|1 pounds||Lean ground beef|
|4 cups||Cauliflower florets|
|3 cups||Finely chopped zucchini|
|1 pack||Frozen peas; 10 oz|
|1 cup||Chicken broth|
|1 pounds||Gnocchi; cooked according to|
|; package directions|
|½ cup||Chopped fresh mint|
Heat oil in large skillet over medium-high heat. Stir in curry powder, ginger and garlic; cook 30 seconds. Stir in ground beef and salt; cook, stirring, until browned. Add cauliflower, zucchini, peas and chicken broth.
Cover and cook until vegetables are tender, 10 minutes. Toss with hot gnocchi and mint in serving bowl. Makes 6 servings.
