Beef & vegetable stir fry

Yield: 8 servings

Measure Ingredient
2 pounds Beef sirloin or inside round steak; boneless
4 tablespoons Vegetable oil
4 cups Fresh vegetables; cut up
(broccoli, carrot, celery)
4 Garlic cloves; minced
2 cans Tomato soup
2 tablespoons Soy sauce
2 tablespoons Vinegar

Slice beef across the grain into thin strips, In large skillet or wok, heat oil. Stir-fry beef until browned.

remove from skillet; set aside. In same skillet, in remaining oil, stir-fry vegetables with garlic until tender-crisp.

Stir in soup, soy sauce and vinegar. Bring to boil. Return beef to skillet. Heat through, stirring occasionally. Serve with rice, if desired.
