Avocado bread

Yield: 1 Loaf

Measure Ingredient
¾ cup Mashed ripe avocados
3 Eggs
1 cup Vegetable oil
3 teaspoons Vanilla
3 cups All-purpose flour
1½ cup Sugar
2 teaspoons Cinnamon
1 teaspoon Salt
1 teaspoon Baking soda
½ teaspoon Baking powder
¾ cup Walnuts; chopped
1 9- x 5-inch loaf pan

Preheat oven to 350 degrees. Grease the loaf pan and set aside.

Mash the avocados and mix with the eggs, oil, and vanilla. Blend well. Add the flour, sugar, cinnamon, salt, baking soda, and baking powder. Fold in the nuts. Bake for 1-½ hours. Cover the top loosely with foil after the first 30 minutes.
