Apple & spinach salad

Yield: 6 servings

Measure Ingredient
1 pounds Spinach -- washed and
Chopped
2 larges Apples -- cored & diced
½ cup Red onion -- thinly sliced
½ cup Walnuts -- chopped &
Toasted
2 tablespoons Lemon juice
1 tablespoon Dijon mustard
½ teaspoon Sugar
⅔ cup Olive oil

In a large salad bowl combine the spinach, apples, onions and the walnuts. In a small bowl, combine the lemon juice, mustard, sugar and add the oil in a stream, whisking, and whisk the dressing until it is combined well. Whisk in salt and pepper to taste and toss with the salad.
