Aduki, orzo and pepper salad

Yield: 1 Servings

Measure Ingredient
2 cups Cooked aduki beans
2 cups Cooked orzo pasta
1 cup Finely diced crunchy fennel
1 cup Slivered roasted red peppers
¼ cup Finely sliced black pitted olives
½ cup Packed Italian parsley,, chopped
½ cup Dressing made with olive oil, balsamic vinegar, garlic
Salt and freshly ground black pepper
Crumbled goat or feta cheese for garnish

Mix the ingredients together and season with salt and pepper; garnish with cheese.

Yield: 4 servings
