Yield: 6 Servings
|1 cup||Onion; finely chopped|
|1 tablespoon||Butter or margarine|
|2 cups||Cooked chicken; diced (or turkey, ham, pork or roast beef)|
|1 cup||Cooked mixed vegetables|
|1 can||Cream of chicken soup; (10 3/4 ounce)|
|1 teaspoon||Poultry Seasoning (For Chicken Or Turkey, Only)|
|1 teaspoon||Celery salt|
|⅛ teaspoon||Black pepper|
|½ cup||Chicken broth|
|1 cup||Grated Cheddar cheese|
Place onion and butter in a 2 quart casserole. Cover with wax paper.
Microwave at high (100%) until tender, 2 to 3 minutes. Combine all ingredients except cheese, with onions. Cover with wax paper. Microwave at medium high (70%) until heated through, 12 to 14 minutes. Sprinkle with cheese. Microwave at medium high (70%) until cheese is melted, 3 to 4 minutes. Makes 6 servings.
NOTE: If using ham, use cream of asparagus soup. If using leftover roast pork, use cream of celery soup. If using leftover roast beef, use cream of mushroom soup.
