Yield: 16 servings

Measure Ingredient
1 medium Potato
5 ounces Semi sweet chocolate
¼ cup Butter
1 teaspoon Vanilla
4 To 5 cups icing sugar
½ cup Chopped nuts Walnuts, almonds or pecans

Boil potato until cooked. Peel and mash. Measure ⅔ cup mashed potatoes. In a saucepan over low heat or in microwave proof dish in microwave oven on low, melt together butter and chocolate. Combine with hot potatoes, salt and vanilla. Blend well. Stir in icing sugar until smooth and firm. Mix in nuts. Spread into greased 9"x9" pan. Cool and cut into squares.
