Yield: 6 servings
|2 packs||Frozen broccoli spears or a|
|Bunch of broccoli|
|1||Whole chicken or 3 full|
|2 cans||Cream of chicken soup|
|1 tablespoon||Lemon juice|
|½ teaspoon||Curry powder (optional)|
|1||Stalk celery, chopped|
|1 medium||Onion, chopped|
|1 cup||Grated cheese|
|Buttered cracker crumbs or|
Cook broccoli and drain. Boil chicken and debone. Saute celery and onion in butter and set aside. Mix mayonnaise, soup, lemon juice, chicken and curry powder. Grease a 9 x 13 inch casserole dish. Layer broccoli first, then chicken mixture, then cheese. Top with crumbs.
Bake 30 to 35 minutes at 350 degrees until bubbly.
