Yield: 6 Servings
|1½ pounds||Extra lean ground beef|
|2 cans||Minestrone soup|
|2 cans||Tomatoes with green chilis|
|2 cups||Pinto beans|
|2 cups||Frozen mixed vegetables|
|Salt and pepper; to taste|
|Garlic powder; to taste|
Brown beef with salt, pepper and garlic. Drain on paper towel and add back to dutch oven. Add remaining ingredients and cook for 30 minutes.
Good served with cornbread.
NOTES : Variation #2: Don't add the ground beef - makes a delicious veggie soup for 1 point per serving! Black beans are a great substitute for the pinto beans, also.
