*red beans & rice (sks)

Yield: 6 servings

Measure Ingredient
1 each Large red onion, diced
4 eaches Stalks of celery, sliced
¼ cup Red pepper, diced
1 each 28 0z Can crushed tomatoes
2 eaches 16 oz cans red beans
½ teaspoon Cajun Spice Mix (McDougall)
½ teaspoon Cilantro
¾ teaspoon Chili Powder
2 teaspoons Salt

Grease non-stick stew pot with 2 tsp olive oil. Saute onions, celery and red peppers. Add crushed tomatoes. Add spices. Simmer for 15 minutes. Add RINSED kidney beans. Heat through. Spoon over brown rice.
