Zucchini-crusted pizza

Yield: 4 -6 serving

Measure Ingredient
3½ cup Grated zucchini--; (grate it coarsely)
3 \N Eggs; beaten
⅓ cup Flour
½ cup Grated mozzarella cheese
½ cup Grated parmesan cheese
1 tablespoon Fresh basil leaves; minced--, (if you don't have fresh, use 1/2 teaspoon dried)
\N \N Salt and pepper

CRUST

Salt zucchini lightly and let stand for 15 minutes. Squeeze out all excess moisture.

Combine all crust ingredients. Spread into an oiled 9 x 13-inch baking pan.

Bake 20 to 25 minutes, until surface is dry and firm. Brush the top with oil and broil it, under moderate heat, for 5 minutes.

Pile on all of your favorite toppings. Bake about 25 minutes.
