Yield: 4 -6 serving
Measure | Ingredient |

3½ cup | Grated zucchini--; (grate it coarsely) |
3 \N | Eggs; beaten |
⅓ cup | Flour |
½ cup | Grated mozzarella cheese |
½ cup | Grated parmesan cheese |
1 tablespoon | Fresh basil leaves; minced--, (if you don't have fresh, use 1/2 teaspoon dried) |
\N \N | Salt and pepper |
CRUST
Salt zucchini lightly and let stand for 15 minutes. Squeeze out all excess moisture.
Combine all crust ingredients. Spread into an oiled 9 x 13-inch baking pan.
Bake 20 to 25 minutes, until surface is dry and firm. Brush the top with oil and broil it, under moderate heat, for 5 minutes.
Pile on all of your favorite toppings. Bake about 25 minutes.
