Measure | Ingredient |

4 smalls | Zucchini |
½ teaspoon | Salt |
2 tablespoons | Oil |
1 cup | Unsalted peanuts, raw or roasted, coarsely ground |
Simmer the zucchini whole in about ½ c salted water until very tender, about 10 minutes. Combine the zucchini & oil & mash into a smooth consistency. Top with the nuts.
VARIATION: When zucchini is tender, drain & slice it, gently stir in the oil & top with nuts.
