Zucchini with peanuts

Yield: 4 servings

Measure Ingredient
4 smalls Zucchini
½ teaspoon Salt
2 tablespoons Oil
1 cup Unsalted peanuts, raw or roasted, coarsely ground

Simmer the zucchini whole in about ½ c salted water until very tender, about 10 minutes. Combine the zucchini & oil & mash into a smooth consistency. Top with the nuts.

VARIATION: When zucchini is tender, drain & slice it, gently stir in the oil & top with nuts.
