| 3 cups | Zucchini, Raw -- finely |

| 1 | Egg |
| ¼ teaspoon | Pepper |
| 1 teaspoon | Salt |
| ½ cup | Flour |
| 1 teaspoon | Baking Powder |
| ⅓ cup | Butter -- melted |
| ⅓ cup | Parmesan Cheese -- grated |
Combine squash, egg, salt, and pepper in mixing bowl. Sift flour and baking powder over mixture. Mix well. Drop by ¼ cupfuls on lightly greased griddle. Brown and turn. Remove to warmed platter and serve with melted butter and Parmesan Cheese. Serves 4-6.
