Zucchini latkes

Yield: 1 Servings

Measure Ingredient
2 mediums Zucchini, shredded
2 tablespoons Wheat germ or matzo meal
5 tablespoons Whole wheat flour, sifted (up to 6)
3 larges Eggs, well beaten
½ teaspoon Salt, or to taste
\N \N Generous pinch of pepper
2 \N Cloves garlic, minced, -or-
¼ teaspoon Garlic powder
\N \N Oil, for frying

>From _Classic Kosher Cooking_ by Sara Finkel Combine all ingredients, mixing well. Drop by tablespoonful into hot oil in a skillet and fry on both sides until golden brown. Yields 10-12 latkes.
