Zucchini bread (m_c-tx) (05/10/93)

Measure Ingredient
3 \N Eggs
¾ cup Oil
2 cups Sugar
2 cups Raw zucchini
2 cups Flour
1 cup Chopped nuts
¼ teaspoon Baking powder
2 teaspoons Baking soda
1 teaspoon Salt
3 teaspoons Cinnamon
1 teaspoon Nutmeg
3 teaspoons Vanilla

Beat eggs, add sugar, oil and zucchini. In separate bowl add al dry ingredients and sift into sugar mixture. Add vanilla and nuts. Pour into 2 greased loaf pans and bake 45 minutes at 350 . (Fills 3 mini pans - bake same length of time).
