1 cup | Corn oil |
2 cups | Grated raw zucchini; packed; do not peel! |
2 teaspoons | Vanilla |
3 cups | Unsifted flour |
1 teaspoon | Salt |
1 teaspoon | Baking powder |
2 tablespoons | Grated orange rind |
2 teaspoons | Cinnamon |
½ cup | Raisins |
½ cup | Pecans; chopped |
Sift dry ingredients. Mix with remaining ingredients. Divide batter between 2 greased and floured loaf pans. Bake at 350 degrees F for 45 minutes to 1 hour, or until done.
