| Measure | Ingredient |

| 5 | Feet medium hog casings |
| 5 pounds | Woodchuck, cubed |
| 2 teaspoons | Salt |
| 2 teaspoons | Black pepper |
| 2 cloves | Finely minced garlic |
| ½ cup | Finely chopped onion |
| 1 teaspoon | Dried rosemary, crushed |
| ½ teaspoon | Sage |
| ½ teaspoon | Thyme |
| 2 tablespoons | Chopped parsley |
Prepare casings. Mix remaining ingredients, grind through the coarse diak, then through the fine disk. Stuff into casings, tie off into 3" links. Saute by vegetable oil.
