warm champagne dressing

½ cup Champagne vinegar
2 tablespoons Sugar
1 teaspoon Flour
2 teaspoons Dry vermouth
1 teaspoon Dijon mustard
1 tablespoon Heavy cream
1½ cup Olive oil
  Salt & pepper; to taste

Combine the vinegar, sugar, flour, vermouth and mustard in a small saucepan. Bring to a simmer. Gradually whisk in the cream and the olive oil, in a steady stream. Season with salt & pepper. Remove from the heat and use.
