| Measure | Ingredient |

| 2½ cup | All-purpose flour; sifted |
| 3 teaspoons | Baking powder |
| 1 teaspoon | Salt |
| 4 | Eggs; separated |
| 2 cups | Milk |
| ½ cup | Pecans; chopped |
Mix flour, baking powder, salt, egg yolks & milk. Beat egg whites until stiff & fold into above mixture. Pour into heated waffle iron. Close & bake until steaming stops, about 4-6 minutes. Yields 8 servings. Recipe may be halved. Batter will not keep.
