|2 cans||Chick-peas, drained and mashed (10 1/2 oz ea)|
|1½ cup||Finely chopped pecans|
|1½ cup||Whole-wheat bread crumbs|
|1¼ cup||Finely chopped spinach|
|¾ cup||Grated carrot|
|¼ cup||Chopped green pepper|
|¼ cup||Chopped red pepper|
|2 tablespoons||Chopped celery|
|1 tablespoon||Chopped fresh parsley|
|2 tablespoons||Butter or margarine|
Combine chick-peas, pecans, bread crumbs, spinach, carrot, green and red pepper, shallots, celery, parsley and mayonnaise. Shape into 6 patties.
Saute patties in butter, cooking until browned on both sides.
