Veggie bangers

Measure Ingredient
2 ounces Vegetable margarine or butter
8 ounces Onions; skinned and finely
\N \N ; chopped
8 ounces Leeks; trimmed, washed and
\N \N ; finely sliced
1 teaspoon Dried sage
4 ounces Fresh breadcrumbs
4 ounces Medium oatmeal
4 ounces Ground mixed nuts
1 \N Free-range egg; beaten
\N \N Salt and pepper
\N \N Vegetable oil for cooking

1. Heat the margarine or butter in a frying pan, add the onions and leeks, and cook over a low heat until softened. Add all the remaining ingredients, except the oil, and mix thoroughly Leave until cool.

2. Shape the mixture into 6 large fat sausages.

3. Heat a little oil in a frying pan, add the sausages and cook until browned on all sides. Alternatively, place on a baking sheet and brush lightly with oil. Bake in the oven at 200øC/400øF/Gas Mark 6 for about 25 minutes or until brown. Serve hot.
