|3||Spring onions; chopped|
|1||Clove garlic; crushed|
|420 grams||Mixed beans; drained well|
|75 grams||Your favourite stuffing mix|
|4||Hamburger buns; lightly toasted|
|Salt and pepper|
|Yoghurt or mayonnaise|
In a saut pan, add ½ tbs oil. Heat and saut the spring onions and garlic.
Add the mixed beans and cook for 2 mins, mashing them with a fork.
Put the stuffing mix into a bowl, pour over 300ml boiling water, mix and stir in the carrot, zucchini and bean mixture.
Season and divide into 4 burgers.
Place the remaining oil into a saut pan and cook the burgers for 3 minutes on each side until golden and brown.
Stack onto the toasted burger buns with the salad ingredients.
Serve with potato wedges.
