Tuscan white bean salad

Measure Ingredient
2 \N 15 oz. cans white beans;
\N \N Drained, rinsed, and drained
\N \N Again
1 \N 6 1/2 oz. jar marinated
\N \N Artichoke hearts, drained
\N \N And coarsely chopped
2 \N Cans water-packed tuna,
\N \N Drained and flaked
5 \N Sun-dried tomatoes (oil-
\N \N Packed), slivered
⅓ cup Kalamata olives, pitted and
\N \N Coarsely chopped
¼ cup Chopped parsley
3 tablespoons Pesto
3 tablespoons Balsamic vinegar
2 tablespoons Olive oil
\N \N Freshly ground black pepper
\N \N To taste

1. Combine the white beans, artichoke hearts, tuna, sun-dried tomatoes,

olives and parsley.

2. Stir together the pesto, balsamic vinegar and olive oil. Pour over the

salad, mixing well. Season with pepper. Serve immediately, or refrigerate.
