In a very large saucepan, combine the turkey, onions, celery and garlic. Cook over medium heat, stirring frequently, for 5 minutes, or until the turkey has changed color and the onions are soft. Add the ketchup, carrots, vinegar, sugar, thyme, pepper, mustard and hot pepper sauce. Stir to mix well. Bring to a boil. Cover, reduce the heat and simmer for 15 to 20 minutes, or until the flavors are well blended. Serve in the buns. 303 calories and 9 grams fat.
