tropical shrimp salad

MeasureIngredient
1 pounds Large shrimp; shelled, deveined,
½ cup Celery; diced
1 small Onion; chopped
Green onions (tops included); sliced thin
2 tablespoons Flaked coconut
2 tablespoons Fresh lemon juice
⅓ cup Mayonnaise; (more if you like)
½ teaspoon Curry powder; or to taste
  Salt & fresh ground black pepper; to taste
2 teaspoons Fresh dill; chopped

Place shrimp in boiling salted water and remove after 5 minutes. Allow them to cool. Add all other ingredients, mix well. Serve chilled on bed of lettuce. Garnish with sliced tomatoes. Makes 3 to 4 servings.
