tomato gin filling
| Measure | Ingredient |
|---|---|
| 6 smalls | Cherry tomatoes, chopped |
| 1 tablespoon | Finely chopped fresh coriander |
| 1 tablespoon | Dry gin |
| ½ teaspoon | Minced pickled jalapeno peppers |
| ½ teaspoon | Grated lime rind |
| pinch | EACH, salt, pepper and sugar |
Im medium bowl, combine all ingredients. Let stand 30 minutes. With slotted spoon, divide evenly among 8 mini tart shells, serve at once.
