Tomato and chive topping

Measure Ingredient
1 \N Shallot; minced
1 \N Clove garlic; minced
1 tablespoon Olive oil
¼ cup Dry white wine
1 large Tomato; finely chopped
2 tablespoons Chopped fresh or frozen chives
2 tablespoons Lemon juice
¼ teaspoon Salt
⅛ teaspoon Pepper
\N \N Fresh chives; for garnish

Cook shallot and garlic in oil in a large skillet over medium-high heat, stirring constantly, 1 minute. Add wine, and cook until reduced by half.

Stir in tomato, chopped chives, and next 3 ingredients. Spoon over salmon or other fish and serve immediately. Garnish if desired. Makes about 1 cup.
