Tofu dressing

Measure Ingredient
8 ounces Firm tofu
4 smalls Onion; finely sliced
½ teaspoon Miso; up to 1, up to
1 teaspoon Rice vinegar; (1 to 2)
8 \N Spring onions; finely diced

1. In a liquidiser pur‚e the tofu with 1-2tbsp of water.

2. Add the onion and miso and liquidise until creamy.

3. Add the rice vinegar and extra water if necessary. Stir in the spring onions and serve over salads.
