The frye's favorite squash casserole

Yield: 4 Servings

Measure Ingredient
1 pounds Chopped yellow squash (about 4 small)
1 \N Onion; chopped
3 tablespoons Butter or margerine
2 \N Beaten eggs
½ cup Shredded cheddar (I use more...we like the cheesy taste)
1 teaspoon Salt
1 cup Milk
1 cup Cracker crumbs (saltines)
1 dash Pepper

From: "Sharon H. Frye" <shfrye@...> Date: Thu, 11 Jul 1996 18:39:47 EDT Preheat oven to 375 degrees. Combine squash, onion, and butter in a skillet. Saute' until squash is tender, then coarsely mash with a fork. Add Remaining ingredients. Pour into a greased casserole dish. Bake at 375 degrees until a knife inserted near the center comes out clean. Let sit 5 minutes before serving.
