|8 ounces||Lean boneless pork loin|
|½ cup||Chicken bouillon|
|¼ medium||Green pepper, diced|
|½ cup||Canned crushed pineapple,|
|No sugar added|
|Artificial sweetener to|
|Equal 1/2 ts sugar|
|½ cup||Cooked enriched rice|
|1 medium||Tomato, cut into 6 wedges|
|Salt to taste|
|½ teaspoon||Chopped fresh parsley|
Broil pork 4 inches from source of heat 5 minutes on each side.
Remove; cool; cut into 1-inch cubes. Place in a nonstick skillet with bouillon, pepper and garlic. Simmer, stirring, until liquid has reduced to half its volume. Add pineapple, sweetener and vinegar.
Fold in rice and tomato. Season to taste. Heat thoroughly over low flame, stirring gently, until liquid is absorbed. Sprinkle with parsley. *From Weight Watchers International Cookbook* Submitted By MICHELLE BRUCE On 01-31-95
