Stuffed zucchini-courgettes farcie

Yield: 4 servings

Measure Ingredient
2 \N Zucchini; split lengthwise
2 ounces Rice; pre-cooked
2 tablespoons Chicken bouillon
1 teaspoon Parsley; minced
\N \N Salt & pepper
3½ ounce Crabmeat; flaked
\N \N Paprika
\N \N Parsley for garnish

Scrape the flesh out of the zucchini, leaving a shell no more than ½ inch thick. Mash the pulp & put it in a casserole with the rice, the bouillon, parsley, salt & pepper. Microwave at HIGH 4-6 minutes until the rice is tender & liquid is absorbed. Add the crabmeat and mix well. Fill zucchini shells with the mixture. Place on a plate & sprinkle with paprika. Cover with waxed paper and cook 4-5 minutes on HIGH, turning halfway. Cook just until zucchini are tender. Let stand, covered, 2-3 minutes. Garnish with parsley before serving.
