| 1 cup | Fresh mascarpone cheese; or more |
| 2 teaspoons | Balsamic vinegar |
| 3 tablespoons | Granulated sugar |
| 1 cup | Heavy cream |
Slice strawberries and place in bowl. Add the balsamic vinegar and sugar and toss to distribute. Let macerate about 1 hour. Remove 1 cup (or more) strawberrries and reserve. Put remaining berries in a food processor along with the mascarpone and process till smooth. Beat heavy cream till whipped and gently but thoroughly combine with the mascarpone mixture.
