strawberry mascarpone fool

4 pints Strawberries
1 cup Fresh mascarpone cheese; or more
2 teaspoons Balsamic vinegar
3 tablespoons Granulated sugar
1 cup Heavy cream

Slice strawberries and place in bowl. Add the balsamic vinegar and sugar and toss to distribute. Let macerate about 1 hour. Remove 1 cup (or more) strawberrries and reserve. Put remaining berries in a food processor along with the mascarpone and process till smooth. Beat heavy cream till whipped and gently but thoroughly combine with the mascarpone mixture. Divide reserved sliced strawberries among 4-6 footed clear goblets and top with the mascarpone cream. Garnish with a whole berry. Date: Tue, 25 Jun 1996 21:41:40 +0300 From: dee@...
