Stewed codfish (guisado de bacalhau }

Measure Ingredient
2 pounds Salt cod soaked overnight
4 \N Potatoes diced
4 mediums Onions chopped
2 \N Cloves garlic chopped fine
1 large Pimento chopped
4 tablespoons Olive oil

Drain cod and rinse several times to remove salt. Heat oil and saute' onions,garlic,and pepper until vegetables are soft. Add cod and potatoes.

Simmer covered for about 30 minutes or until fish is cooked. Season with salt and pepper to taste.Garnish with sprigs of parsley. Serve with Portuguese or Italian bread
