Steamed mussels

Yield: 6 Servings

Measure Ingredient
10 pounds Mussels
6 ounces Beer
½ cup Green bell pepper,diced
½ cup Red bell pepper,diced
½ cup Onion,finely diced
4 mediums Garlic cloves,crushed
½ cup Butter,hot
¼ cup OZO or PERNOD

Make sure all of the mussels are clean,beards removed and alive.Put all 10 pounds into a large pot.Add the red bell peppers,green bell peppers,onion, garlic and beer.Bring to a boil and reduce to medium heat.Continue to cook until all of the shells are open.Approx 15 min.Discard those that do not open.Serve in a bowl and sprinkle "OZO" or "PERNOD" over the top.Garnish with parsley.Serve with the hot butter as a dipping sauce.
