| 2 tablespoons | Olive oil |
| 1 medium | Yellow onion; diced fine |
| ½ cup | Fresh garlic; chopped fine |
| 2 cups | Green chile peppers; roasted, peeled; seeded, chopped |
| 2 teaspoons | Dried oregano (Mexican prefered) |
| Salt to taste | |
| 12 slices | Provolone; cut in half |
| 8 | 6-oz steaks (New York; etc) |
Heat olive oil over medium heat, add garlic and onion. Saute until onion turns transparant, 5-6 min. Add green chile, oregano and salt, cook another 5 minutes and remove from heat. Grill steaks until ⅔ done (maybe 3-4 min/side). Place steaks in preheated broiler, top with green chile sauce and provolone.. Broil 1-2 min until cheese is melted and steaks are done.
