Squirrel soup

Yield: 4 servings

Measure Ingredient
2 \N Squirrels, cut up
1 \N Bay leaf
\N \N Salt
\N \N Pepper
1 teaspoon Oregano
1 teaspoon Thyme
2 \N Potatoes, peeled and diced
2 \N Carrots, sliced
½ cup Green beans, sliced
1 \N Onion, chopped fine
½ cup Broccoli
½ cup American cheese
\N \N Seasoned croutons

Boil the squirrels in water, bay leaf, salt, pepper, oregano and thyme until meat falls from bones. Remove bones. Place meat aside.

Combine potatoes, carrots, green beans, onion, broccoli and cheese in a large pot. Simmer for 15 minutes. Add the squirrel meat and continue to simmer until vegetables are done. Serve with seasoned croutons. Submitted By MICHAEL ORCHEKOWSKI On 08-09-95
