Spinach garlic bread

\N \N French or Italian bread 1
\N \N Pound
1 medium Onion -- chopped
2 \N Garlic cloves -- minced
3 tablespoons Olive oil
1 pack Spinach
\N \N Thawed & well drained frozen
\N \N & chopped
1 tablespoon Parmesan cheese -- grated
1 teaspoon Italian seasoning
½ teaspoon Fennel seed -- crushed
1 large Tomato -- seeded & chopped
1½ cup Mozzarella cheese -- 6 oz.
\N \N Shredded
1 tablespoon Dried basil
\N \N Chopped fresh parsley,
\N \N Optional
\N \N Bread

Cut bread in half lengthwise. Place with cut side upon a baking sheetl; set aside. In a skillet, saute onion and garlic in oil until tender. Add spinach and stir until heated through,about l minute.Remove from the heat. Stir in Parmesan cheese,ltalian seasoning and fenne seed; mix well. Spread evenly over bread halves.

Sprinkle with tomato, mozzarella and basil. Bake at 400 deg. for 8-l0 minutes or until cheese is melted. Garnish with parsley if desired.
