|3 tablespoons||Peanut oil|
|8||Spring onions; sliced|
|2½ teaspoon||Grated ginger|
|1||Clove garlic; crushed|
|3||Red chillies; (seeded), finely|
|5½ tablespoon||Lemongrass; finely chopped|
|1 tablespoon||Grated lime rind|
|3 tablespoons||Lime juice|
|2 tablespoons||Hoisin sauce|
|1½ tablespoon||Salt reduced soy sauce|
|⅓ cup||Chicken stock|
|200 grams||Sliced baby beans|
Heat 1 tablespoon oil in wok, add half the pork, quickly toss to brown and sear (1 -2 minutes). Remove to side dish. Repeat with another tablespoon oil and remaining pork, remove. Heat remaining oil, reduce heat. Add spring onions, ginger, garlic, chillies and lemongrass, stir and cook 1 minute.
Add rind, juice, hoisin sauce, soy sauce, stock and beans, cook 1-2 minutes. Return pork to wok, stir to combine. Serve with boiled noodles or rice.
