Spicy pork stir fry

Yield: 4 servings

Measure Ingredient
600 grams Pork Strips
3 tablespoons Peanut oil
8 \N Spring onions; sliced
2½ teaspoon Grated ginger
1 \N Clove garlic; crushed
3 \N Red chillies; (seeded), finely
\N \N ; chopped
5½ tablespoon Lemongrass; finely chopped
1 tablespoon Grated lime rind
3 tablespoons Lime juice
2 tablespoons Hoisin sauce
1½ tablespoon Salt reduced soy sauce
⅓ cup Chicken stock
200 grams Sliced baby beans

Heat 1 tablespoon oil in wok, add half the pork, quickly toss to brown and sear (1 -2 minutes). Remove to side dish. Repeat with another tablespoon oil and remaining pork, remove. Heat remaining oil, reduce heat. Add spring onions, ginger, garlic, chillies and lemongrass, stir and cook 1 minute.

Add rind, juice, hoisin sauce, soy sauce, stock and beans, cook 1-2 minutes. Return pork to wok, stir to combine. Serve with boiled noodles or rice.
