spicy ginger sauce

1 servings
3 tablespoons Vegetable oil
3 tablespoons Rice vinegar
1½ tablespoon Soy sauce
1 tablespoon Oriental sesame oil
2 teaspoons Minced fresh peeled ginger
1 teaspoon Sugar
Carrot, shredded
½ teaspoon Chili oil or - 1/4 ts red pepper
Green onions, sliced thin
½  Cucumber, seeded, peeled ---
  And chopped
¼ cup Chopped fresh cilantro

Whisk all ingredients together in a large bowl. Serve over 12 oz. (dry weight) of japanese noodles. Serve well chilled.
