Spicy baked catfish

Measure Ingredient
1½ pounds Cat fish fillets; skinned
1 teaspoon Minced garlic
2 tablespoons Olive oil
1 teaspoon Ground coriander
1 \N Yellow onion; thinly sliced
½ cup Plain yogurt
3 \N JalapeƱo peppers; seeded and minced
2 teaspoons Fresh ginger; minced
¼ cup Cucumbers; deseeded, peeled and sliced thinly

Preheat oven to 400°F Lay fish in a shallow baking dish, overlap any thin sections. Brush with 1 Tbsp of olive oil. Mix yogurt and cucumbers and set aside. Heat remaining oil in a frying pan, sauté onion, peppers, ginger and garlic until onion is soft, about 4 mins; stir in coriander. Sprinkle mixture over fish and bake in oven until fish is cooked, about 10 - 12 mins. Serve with a yogurt cucumber mix to garnish.
