Spicy apple pancakes with cider sauce

Yield: 13 pancakes

Measure Ingredient
2 cups Biscuit mix
½ teaspoon Ground cinnamon
1 each Egg; beaten
½ cup Sugar
1 tablespoon Cornstarch
⅛ teaspoon Cinnamon
⅛ teaspoon Ground nutmeg
1⅓ cup Milk
¾ cup Apple; shredded (about 1 medium apple)
1 cup Apple cider
1 tablespoon Lemon juice
2 tablespoons Butter or margarine

CIDER SAUCE

Combine biscuit mix and cinnamon in a bowl. Combine egg and milk; stir into dry ingredients until smooth. Stir in shredded apple.

For each pancake; spoon about ¼ cup batter onto a hot lightly greased griddle. Turn pancakes when tops are covered with bubbles and edges are brown. Serve with Cider Sauce. Yield: 13 (4-inch) pancakes.

CIDER SAUCE:

Combine first 4 ingredients in a heavy saucepan; gradually add apple cider and lemon juice. Cook over medium heat, stirring constantly, until mixture boils. Cook 1 minute, stirring constantly.

Remove from heat, stir in butter. Yield; 1-¼ cups.
