Soak the plums in the salted water for at least an hour.
This will enhance the flavour and slightly soften them.
Slowly bring the vinegar, sugar, cinnamon, star anise and cloves to the boil to dissolve the sugar.
After about five minutes take the vinegar and sugar mixture off the heat.
Drain the plums and put them into sterilised jars.
Pour the vinegar and sugar mixture over the plums.
Seal the jars.
