Spambalaya with rice

Yield: 6 Servings

Measure Ingredient
1 can SPAM Lite Luncheon Meat, cubed (12 oz)
1 cup Chopped onion
⅔ cup Chopped green bell pepper
½ cup Chopped celery
2 \N Garlic cloves, minced
1 can Cajun style or regular stewed tomatoes (14.5 oz)
1 can Lower sodium chicken broth (10.75 oz)
½ teaspoon Dried leaf thyme
8 drops Hot pepper sauce
2 \N Bay leaves
1 cup MAHATMA Rice
2 tablespoons Chopped parsley

In large non-stick skillet or 3-quart non-stick saucepan, sauce SPAM Luncheon Meat, onion, green pepper, celery, and garlic until vegetables are tender. Add tomatoes, chicken broth, thyme, hot pepper sauce, and bay leaves. Bring to a boil; stir in MAHATMA rice. Cover.

Reduce heat and simmer 20 minutes or until rice is tender. Discard bay leaves. Sprinkle with parsley.
