In 4-quart saucepan, melt butter. Stir in carrot and onion. Cook, stirring occasionally, until onion is tender. Stir in remaining ingredients; mix well.
Cook over medium-high heat, stirring occasionally, until mixture comes to a boil. Reduce heat to medium. Cover. Cook, stirring occasionally, until potatoes are tender.
