Melt butter in 2-qt. casserole; place blintzes in casserole in 1 layer. Blend other ingredients with well-beaten eggs and pour over blintzes. Bake 45 Min. in 350 F. oven until top starts to brown.
Serve with fruit topping, or sour cream.
