Finely chop onion.Seed and chop chili.Melt butter in small saucepan.Add onion and chili and cook over medium heat 2 to 3 minutes or until union is soft but not brown..
Remove pan from heat and whisk in honey,mustard,lime juice and bourbon.Season to taste with salt and pepper.Taste sauce and make necessary adjustments.Sauce should be a little sweet,a little sour and pleanty spicy.Makes 1 cup....
